In a medium-sized bowl, using either a hand mixer or a stand mixer, beat egg whites and water until frothy.
Add three cups of fondant sugar (reserve 1/2 cup of fondant sugar for kneading later). Add the fondant sugar one cup at a time and mix until incorporated into the egg whites and water.
Add corn syrup and peppermint oil, mix until incorporated.
Remove the firm filling from the bowl and set it onto waxed paper or a silicone liner.
knead the additional 1/2 cup of reserved fondant sugar into the dough until it's no longer sticky.
Use with chocolate molds or roll into balls and dip into melted Merckens Dark Chocolate Candy Coatings.
