Sometimes the sweetest projects start with a simple question from a friend. A few weeks ago, a friend sent me a photo that was floating around social media, wafer cookies dipped to look like little pencils. She asked, “Do you think we could make these?”
I took one look and thought, these are so easy and they’d be perfect to show my customers! Back-to-school season is right around the corner, and I just know teachers and kids will love them.
But here’s the thing, most of the versions I saw used mini chocolate chips for the pencil tips, and I know from experience those can be tricky for customers to find. So I decided to make mine 100% with Merckens chocolate melts. No hunting down special ingredients, just easy-to-find supplies that we carry right here at Confectionery House.
And let me tell you, they turned out adorable! Even better, they were quick, budget-friendly, and you can make them by the dozens. That means you can whip up a whole classroom’s worth of treats without spending hours in the kitchen or breaking the bank.

If you’ve never worked with Merckens before, here’s our guide on how to melt Merckens chocolate melts.
How Do You Make Pencil Wafer Cookies with Merckens Chocolate Melts?

Step 1: Cut the cookies
Trim the corners off one end of each wafer cookie so it forms a pencil tip.

Step 2: Dip the pencil tip
Dip the pointed end into melted Merckens White Chocolate Melts

Step 3: Add the eraser
Dip the opposite end of the wafer into melted Merckens Pink Chocolate Melts.

Step 4: Place on cookie sheet lined with parchment paper
Chill the dipped cookies in the refrigerator for 1-2 minutes just until the chocolate sets.

Step 5: Pipe the pencil lead
Let the cookies come to room temp, and then pipe the pencil lead
Melt a small amount of Merckens Dark Chocolate Melts in a piping bag and pipe a tiny dot on the white end for the pencil “lead.”
That’s it! Cute little pencil cookies in minutes.

Tips and Fun Variations
- Three pounds of Merckens chocolate melts with three packages of wafer cookies will make a big batch — perfect for sharing with multiple classrooms.
- Don’t toss the trimmed cookie tips. Mix them into leftover melted chocolate to make wafer bark, a crunchy little bonus treat.
- Switch up the wafer flavors for different looks and tastes.
- Package each cookie in a poly bag and tie with ribbon for the perfect gift presentation.
This project reminded me that sometimes the simplest ideas bring the most joy. These pencil wafer cookies came together in no time, yet the result was so fun and smile worthy.
Whether you’re sending treats into school, surprising a teacher, or just making a little weekend project with your kids, these cookies are sure to be a hit.
