There are some rules in candy making you’re just not supposed to break. And yet… here we are.
I really wanted to make pumpkin spice popcorn. Cozy, crunchy, sweet, and of course, I needed it loaded with sprinkles. The problem? I didn’t have pumpkin spice LorAnn oil candy flavoring, only pumpkin spice emulsion. If you’re a candy maker, you already know what a disaster that can be. Liquids in chocolate = instant seize.
But I wasn’t ready to give up. With a bag of Merckens White Chocolate Melts in one hand and a package of Paramount Crystals in the other, I decided to break the rules. And guess what? It worked. Beautifully.
This recipe is the perfect Halloween party snack. Sweet, pumpkin-spiced chocolate-coated popcorn with a generous handful of Monster Sprinkle Mix on top. It’s colorful, festive, and dangerously addictive. And the best part? You can totally make it at home.
Why You'll Love This Recipe
- Pumpkin emulsion without the disaster. Normally, you’d never add an emulsion to chocolate, but Paramount Crystals bring the chocolate back to that smooth, dippable, drizzle-ready texture.
- Delicious fall flavor. The salty popcorn combined with the sweet creamy white chocolate and pumpkin spice is like a fall festival for your taste buds.
- Merckens White Chocolate Melts. Smooth, creamy, easy to work with — they’re my go-to chocolate for candy making.
- Monster Sprinkle Mix. Because what’s Halloween without a pop of spooky fun? Sprinkles do 90% of the decorating for you.
Simple ingredients. You don’t even need to pop your own popcorn, a grocery store bag from the chip aisle works just fine.
Tips & Tricks
- Work quickly once you add the chocolate to the popcorn, you want to get the mixture out onto the pans so you can start to add your sprinkles before the chocolate sets up.
- Want more crunch? Omit some of the popcorn and add some candy corn or pretzels to the mix.
- Package it in cellophane bags with a ribbon for an easy Halloween party favor or bake sale treat. I was able to generously fill nine 3 1/2 x 2 1/4 x 9 3/4 Inch Cello Bags with one batch of this recipe.
