Directions
Begin by melting the Merckens white chocolate melts in the microwave. Heat them in 30-second intervals, stirring in between until fully melted and smooth (see how to melt Merckens here).
Once the chocolate is melted, add the cotton candy Lorann flavoring. This may thicken the chocolate, so to thin the consistency, add 3 tablespoons of paramount crystals. These crystals are essentially the same fat that's already in the chocolate, and they help to thin down the chocolate.
Stir the mixture well to ensure that the flavoring and crystals are fully incorporated. If needed, place the mixture back in the microwave for an additional 10 seconds to ensure that any remaining paramount crystals melt completely.
Once the chocolate mixture is smooth, add in the tiny crispy rice. Stir until the crispy rice is evenly distributed throughout the mixture, adding that magical crunch to the bark.
Line a sheet pan with parchment paper. Pour out a small amount of the chocolate mixture onto the parchment paper, approximately ¼ to ½ cup, and use a spatula to spread it out evenly.
Now, it's time for the fun part – creating the magical swirls! Using Chef Master oil-based candy color (not regular gel or liquid food color), add dots of color onto the white chocolate and swirl them gently using a spatula, working quickly (as the chocolate will begin setting up as it cools). Add more white chocolate and continue adding color and swirling. Layering the white chocolate as you go can help achieve perfect swirls.
Once you're satisfied with the swirls, sprinkle your unicorn bark with your favorite sprinkles and edible glitter stars to add an extra touch of magic.
Place the sheet pan in the refrigerator for 5 to 10 minutes, or until the bark is set.
Once the bark has set, break it apart into pieces and enjoy the magical combination of sweet white chocolate, crispy rice, and colorful swirls!
