Quick and easy No-bake lemon and lime flavored cookie recipe. These cookies are sweet, tart, and refreshing, the perfect spring or summer treat!
Ingredients

1/2 pound Merckens Yellow Coatings

1/2 pound Merckens Light Green Coatings

12 to 16 drops LorAnn Lime Oil

12 to 16 drops LorAnn Lemon Oil

2 teaspoons Paramount Crystals

Pinch Citric Acid
1 box (12 ounces) vanilla wafers, we used Nilla Wafers by Nabisco
Directions
Melt Yellow Merckens Candy Coatings in a small bowl. (see HERE to learn how to melt Merckens).
Stir 12 drops of LorAnn Lemon oil, 1 teaspoon paramount crystals and a small pinch of citric acid into melted coatings. Add more lemon oil if desired.
Drop vanilla wafers, one at a time, into yellow melted candy coatings. Using a dipping tool or fork, move the wafer cookie around to coat in the melted chocolate.
Using a dipping tool, remove the wafer cookie and gently tap the dipping tool onto the side of the bowl to remove excess candy coating, place on a cookie sheet lined with parchment paper.
Repeat process dipped the remaining wafer cookies into melted light green candy coatings mixed with lime oil.
Once all of the wafer cookies are dipped, place them in the refrigerator until the candy coating has set up and hardened.
Recipe Note
Store leftover lemon & lime cookies in a covered container in a cool dry place for 2-3 weeks.
