Things you need to know about Russian Pastry Tips:
Russian Pastry Flower Tips are larger and wider than standard cake decorating tips, so you won't be able to use a coupler; they fit best in an 18-inch decorator bag.
We like to use 18 inch Kee-Seal brand disposable pastry bags as they allow you to cut the opening to fit the size of the tip you're using.
You need stiff buttercream icing when working with Russian Flower Tips (but not too stiff).
Our first try with these tips was an epic failure, our frosting wasn't stiff enough, our petals kept flopping, and we weren't sure if the problem was us or the buttercream.
Feeling discouraged, we decided to test different buttercream recipes and we came up with an easy buttercream frosting recipe that works great with these Russian flower tips!
The consistency of the frosting should be smooth (you don't want your mixer struggling to whip it) and you should be able to easily squeeze it from a pastry bag. If you've made the buttercream too soft, add more confectioner's sugar.
We recommend piping shorter flowers in the beginning, the higher you pipe the petals the more of a chance they'll flop or close in. As you practice more and gain control you can practice building the flowers up higher. Some of the flower designs actually look better when piped shorter.
You can make multi-colored flowers by marbling two different colored frostings together before placing it into your piping bag. The flowers look great in a solid color, but we love the two-tone look, it really brings out the dimension in the petals.
You can also mix and match the different style tips and pipe a beautiful array of flowers, buttercream flower bouquets on a cake make a statement!
